چکیده

This study aims to determine the drying rate constant of coconut chips using an oven. Coconut is carried out at temperatures 50 ° C, 60 C and 70 C. Drying has been conducted initial water content 40-50% wb until it reached ± 10% wb. The change moisture was measured every 15 minutes, measurement determined by thermogravimetric method. Newton's model used in determining observation constant. Furthermore, applied predict as a function temperature Arrhenius equation. results showed that predicted constants ranged from 0.0090 - 0.0130 minute-1.
